I’ve been following the recent WSJ report about Taco Bell “rethinking” their drive-thru AI strategy. While I applaud their innovation efforts, this pivot highlights what I believe is a fundamental misunderstanding of what customers actually need from AI in food service. Drive-thrus are inherently bottlenecked experiences. Whether you’re talking to a human or an AI, you’re still: - Waiting in the same queue - Going through the same ordering process - Dealing with the same pickup timeline A giant kiosk would deliver the same outcome with far less complexity and risk. Successful retail AI implementations focus on customer efficiency, not operational replacement: Pre-ordering: Let me order from my phone and just pick up Personalization: Remember my preferences and dietary restrictions Seamless integration: Make the experience frictionless, not novel Drive-thru environments are AI’s worst enemy: - Engine noise, wind, multiple speakers - Stressed customers in a hurry - No visual cues or error recovery options When customers have a bad experience with conversational AI in this setting, it damages their perception of the entire technology category. We’re essentially putting our most challenging use case as the customer’s first impression. MIT’s recent report showing 95% of enterprise AI pilots failing directly correlates with what we’re seeing in restaurants. The problem isn’t the technology, it’s the application strategy. We cannot give customers the hardest implementation of AI and expect them to embrace it. Instead of replacing human interactions in complex environments, let’s focus AI where it genuinely improves the customer journey. The future of restaurant AI isn’t about talking to a box, it’s about making ordering so seamless that customers don’t even realize AI is involved.

5moReally insightful to see how Samosa Party is using AI to reimagine restaurant operations. That said, during my visit to their Sector 120 outlet, I felt there’s still scope to bring in architectural and interior design expertise alongside AI. While AI can optimize layouts and workflows, details like consistent spacing between tables, alignment of hanging lights with seating, and coordination of wall art with furniture are best observed and refined by experienced designers on site. In F&B retail, these “small details” create a big impact on ambience, comfort, and overall customer experience. Perhaps the real opportunity lies in AI + architects/designers working together to shape stores that are not just operationally smart but also spatially delightful.
