#essays2 - Lessons from Lincolnshire
Last year, I made a deliberate shift from the agency world to the world of fine chocolate. But to truly "curate" these experiences, I knew I needed to go deeper.
This led me to Lincolnshire, UK, to earn my IICCT Chocolate Tasting Certification.
What stayed with me wasn't just the technical knowledge; it was the people. I found myself in a room with passionate individuals from all over the world. We spent our time exploring each bar together, applying every ounce of our senses to uncover the stories hidden in the cacao.
More importantly, it was the cultural impact on palate that hit me the hardest. I realized that how we taste is deeply influenced by where we come from—our heritage, our rituals, and our surroundings. It forced me to rethink everything I knew about flavor.
Fine chocolate deserves the same respect we give to fine wine, specialty coffee, and artisanal cheese. It’s not just about sweetness; it’s about decoding origin, terroir, and the complex science of fermentation.
This certification is more than a credential—it’s a commitment. At
essays in cacao , my goal is to bring that same level of precision and curiosity to Hong Kong. I’m excited to bring this global perspective back home, where we’ll be hosting immersive tastings designed to change how you experience chocolate.
Let’s elevate the daily ritual, one bite at a time.
