INGREDIENTS: • - 2 cups sushi rice • - 2 1/4 cups water • - 1/4 cup rice vinegar • - Salt Water • - Nori seaweed • - 1/4 cup soy sauce + 2 tsp maple syrup INSTRUCTIONS: • Rinse the rice with cold water until the water runs clear. Add the rice and water into a pot cook for about 15 minutes or until the rice is cooked. • Transfer it immediately to a large bowl and add the vinegar. Use a spoon to fold the rice and let it cool. • Dip your hands in water and sprinkle some salt, add a 1/3 cup of cooked rice to your hand, press into a triangle shape. Repeat until there's no rice left. • Fry on one side until golden, flip, and cover with the mixture of soy sauce and maple syrup. Keep frying until golden and crispy. • Wrap with a small piece of seaweed.

When we think of Japanese culinary culture, we obviously think of sushi, ramen and even the famous Okonomiyaki omelette... But what we particularly adore is the onigiri! This little triangle of rice is the ideal snack for an on-the-go lunch, especially in Japanese konbinis (convenient stores). Endlessly customizable, we've chosen to fill it with a mayonnaise-spiced tuna filling, coated of course with glutinous rice and nori seaweed for crunch. This rice sandwich is found throughout Asia under a variety of names, including"Samgak Gimbap" in South Korea. So, let's get to work! ;-)

Crispy Rice Tutorial…I’m always getting asked how I get it this way…I’m by no means an expert but this is how I learned and it works every time ❤️.

PS: Crispy rice is inspired by Chef Nobu Matsuhisa.

Ingredients:
• 1 cup calrose rice (sushi rice).
• 2 3/4 cups water (start with 2.5 c but add more if it still has some bite to it, I find it works better when it is fully cooked).
• generous pinch of salt.
• 2.5 tbsp rice vinegar.
• 2 tsp cane sugar.

•neutral oil for frying.

Directions:
• 1.- Add the rice, water and pinch of salt to a pot. Bring to a boil and lower heat, cook covered until done.
• 2.- Mix the rice vinegar and sugar. Add it to the rice while it is hot.
• 3.- Press the rice tightly on a baking dish with parchment paper. Place in the freezer
