Does anyone else love a sweet treat? While I don’t eat loads of chocolate, I love the occasional sweet snack. However, you have to be quick in this house. The boys love this Easy Decadent Crunchie Rocky Road Recipe; it’s super sweet and a real treat for a snack or to pop in lunch boxes. However, it’s not an eat-all-the-time snack, but it is perfect for a charcuterie board or party snack.

Of course, you can buy Rocky Road if you want an easy option, but nothing is better than homemade. Not only do you know exactly what’s in it, but you can also tailor the recipe to suit your tastes and family.

Ingredients

  • 200g Dark Chocolate
  • 200g Milk Chocolate
  • 100g Mini Marshmallows
  • 4 Cadburys Crunchie Bars or Honeycomb
  • 200g Digestive Biscuits 
  • 125g Butter
  • 2 Tbsp Golden Syrup

How To Make Crunchie Rocky Road

Break down the Crunchie bars but not too small

Start by lining a square tin with grease proof paper and breaking up all of the dark chocolate and 150 g of the milk chocolate into a bowl. (Put 50g of milk chocolate to one side to drizzle later) Add the syrup and butter and put to one side.

Now break up the Crunchie bars into a large bowl, you want to break them up into crunchie chunks, but not too small. I find putting them in a sealable bag and hitting them with a rolling pin does the job. 

Next, break up the digestives into the bowl and mix in the crunchie; the digestives need to be smaller in size than the Crunchie pieces. It’s ok if there are small pieces and crumbs, too. 

Melt the Chocolate and Butter

You can now melt the chocolate and butter mixture, I popped it into the microwave for 1 minute in a heatproof bowl, but watched it until the butter had melted. As soon as the butter melts take it out and stir. Don’t worry if the chocolate hasn’t melted, simply stir it with a spatula and the butter very quickly melts the chocolate.

Gradually mix the biscuit mix and marshmallows until it is thoroughly coated with the melted chocolate mixture, it takes quite a bit of mixing. Give it a good stir to ensure all the biscuit is thoroughly coated.

Pour Into A Lined Tin

Add the rocky road mixture to a tin lined with grease proof paper

Pour the Crunchie Rocky Road mixture into the lined tin, and evenly spread into all of the corners, once it is evenly spread place a piece of grease proof paper on top and squash it down to compact.

Melt the remaining chocolate in the microwave and drizzle over the top of the flattened Rocky Road and sprinkle with marshmallows.

Pop The Crunchie Rocky Road Into The Fridge To Set For At Least Three Hours

Leave in a fridge to set for a least 3 hours

Once you Crunchie Rocky Road is thoroughly set remove from the fridge and slice into 20 squares with a sharp knife.

Store in an airtight container in the fridge, it melts pretty quickly if left out so keep it cool. It’s ok to serve on a buffet, or charcuterie, however leaving out overnight will make it soft. You can store it for up to a week, any longer and it won’t taste as fresh.

If you are not a fan of dark chocolate you can substitute the dark chocolate for milk chocolate. However the dark chocolate flavour is not overwhelming, if anything it balances the sweetness of the Rocky Road Bars. You can also add raisins for extra texture and flavour.
