Begin your evening on a high note at Jin Ting Wan, Marina Bay Sands’ latest dining destination and Singapore’s highest authentic Cantonese restaurant. Helmed by Executive Chef Albert Li, the restaurant is located on the 55th floor, where skyline views are framed by deep blue and gilded gold interiors reminiscent of the Song Dynasty. At the heart of it all is the cuisine, a masterful expression of Yue culinary traditions thoughtfully reimagined for the modern palate.

Among the standout dishes is the Roasted Duck with Black Pepper, prepared using a time-honoured method that splits the duck to resemble a Chinese pipa instrument. Other menu signatures include Drunken Mantis Shrimp with Chinese Celtuce, and Alaskan King Crab. The menu also pays homage to Guangdong’s broader culinary heritage, with influences from Hakka, Teochew and Shun De traditions woven throughout.

The dining journey extends well beyond the plate. Jin Ting Wan’s distinguished tea programme is thoughtfully led by Head Tea Master Jacky Zhao Gang, who has more than 20 years of experience in the intricate art of Chinese tea. Featuring over 80 varieties across seven Chinese tea categories, each tea has been personally selected for its terroir, taste and seasonality through China’s storied terrains. Jin Ting Wan also houses one of Singapore’s most extensive collections of Chinese fine wines. Curated by Head Sommelier Joe Yang, the selection features over 100 labels that showcase the diversity and sophistication of China’s terroir — from Ningxia and Hebei to Yunnan, Shandong, and Shanxi.

At KOMA Singapore, Japanese folklore meets contemporary theatrics. Step through towering vermillion arches and discover a cocktail menu that celebrates harmony, balance and seasonal ingredients. Highlights include the Star of the Show with butterfly pea gin, yuzu sake and edible glitter while the Little Crane delights with lychee nectar, elderflower and lemongrass served in a delicate bird‑shaped glass.

For those who appreciate a good backstory, Mott 32’s Cold Tea Cocktail Menu channels the spirit of 1920s Prohibition-era speakeasies, when teapots hid more than just tea. Choose from hot cocktails, digestives and dessert-style serves that spotlight Chinese ingredients with a twist. Standouts include the rich, umami-laced Kowloon Coffee that is served hot and the bold Sichuan Smash, a fiery tribute to oriental flavours crafted with Sabatini Gin, Sakura Liqueur, Menta and a spritz of Chilli Szechuan Mala.

If you’re looking for drinks with a side of rooftop views unlike any other in the city, head to Spago Bar & Lounge, where Spago After Dark begins at 10 PM, serving up iconic handcrafted cocktails such as The Garden of Eden and Show Me Love at just SG$18++. Complement your drink with a selection of delectable bites—like the irresistible Chicken “Laksa” Spring Roll.
