01

Fruit Reception & Incoming QC

Incoming pomegranates are weighed and sampled on arrival. Technicians record initial Brix, titratable acidity and the sugar/acid ratio, and check rind integrity before the lot is accepted. Each lot is logged against its orchard origin for full traceability.

Equipment: Platform weighbridges, portable refractometers, digital titration units, barcode lot-tracking terminals.

Washing, Sorting & Inspection

Pomegranates are washed under fresh-water flow and inspected, then opened so the arils can be separated from the rind. Keeping rind and internal membrane out of the juice is what controls bitterness and astringency in the finished concentrate.

Equipment: Spray washers, inspection belts, aril separation lines, density separators.

Aril Pressing & Juice Extraction

Separated arils are pressed gently to release the juice. Pressure is kept low deliberately: hard pressing extracts tannins from any residual membrane and drives astringency, so yield is traded against cleanliness of flavour and colour.

Equipment: Belt and bladder presses, decanter centrifuges, screening finishers.

Enzymatic Clarification

Raw cloudy juice is treated with pectinase to break down pectin, then clarified by settling, centrifugation and fine/ultra-filtration to yield a bright, stable juice. Cloudy grades skip depectinisation to retain natural cloud and mouthfeel.

Equipment: Enzyme dosing stations, holding tanks (40–50°C), disc-stack centrifuges, ultrafiltration and sheet filters.

Pasteurisation

Clarified juice is pasteurised by HTST (High Temperature Short Time) treatment at 80–85°C for a few seconds in a plate heat exchanger, inactivating enzymes and spoilage micro-organisms while preserving colour and flavour. A regeneration section recovers most of the heat to reduce energy use.

Equipment: HTST plate heat exchangers (APV, Alfa Laval, Tetra Pak), holding tubes, heat-regeneration sections.

Evaporation to 65° Brix

Single-strength juice is concentrated to 70° Brix in a multi-effect falling-film evaporator under vacuum at reduced temperature. Volatile pomegranate aroma is stripped ahead of evaporation and added back to the finished concentrate to restore fresh top-notes.

Equipment: Multi-effect falling-film evaporators (GEA, APV), aroma recovery columns, in-line refractometers.

Deionization

For deionized pomegranate concentrate, the concentrate is passed through cation and anion ion-exchange resin columns to remove colour, acidity and flavour, leaving a near-neutral, colourless natural sweetener used to standardise Brix and sweeten formulations without adding pomegranate character.

Equipment: Cation/anion ion-exchange columns, regeneration skids, polishing filters, conductivity monitoring.

Every batch is analysed before a Certificate of Analysis is signed and released: Brix (±0.5°), titratable acidity, pH and colour (420 nm), with full lot traceability from orchard origin to delivery — authenticity is a commercial risk for pomegranate, so the paper trail matters as much as the numbers. Aseptically filled pomegranate juice concentrate has an 18–24 month shelf life stored cool and dry; frozen storage at −18°C extends it further. The clock starts from the processing date printed on every pallet label.

Pomegranate is one of the most adulterated juices on the market: a landmark study using the IMAS authenticity algorithm found only 6 of 23 commercial pomegranate juices met all criteria (Zhang et al., J. Agric. Food Chem. 2009), with grape, apple, pear and aronia concentrates the usual additions. Authenticity is therefore a commercial risk, not a theoretical one. How much sugar does pomegranate juice concentrate replace?

70° Brix pomegranate juice concentrate contains roughly 68–70 g of natural sugars per 100 g, so on a sweetness basis about 1 kg of concentrate provides the sweetening of around 0.65–0.70 kg of sugar (fructose is sweeter than sucrose, so perceived sweetness can be higher). Deionized pomegranate concentrate is used the same way when you want the sugars without pomegranate flavour or acidity — typical for sweetened-only-with-fruit and no-added-sugar claims.
